Mock Chicken Salad

Serve Chilled with a salad or on your favorite roll/bun.

marinade 2 hours or over night:

1 pound Twin Oaks Plain Tofu or Tempeh, diced
2 cups sesame oil
1-2 cups oil, till all tofu is covered

Then bake on greased baked sheet at 350 F for 30-40 minutes, till golden brown. Once tofu is cooled mix all the following ingredients together with the tofu.

½ cup diced onion
1 cup mayonnaise, add more if dry (can use tofu sour cream)
1 cup celery, chopped
1 TBS sage
salt and pepper to taste

  1. Just wondering..do you really use 2 cups sesame oil? then after that it says 1-2 cups oil…is that the original 2 cups or an additional 1-2 cups? do you need 2 cups or 1-2 cups? thanks!

    I agree, this recipe doesn’t make sense–2 CUPS of oil?!! That is a LOT. Hey, TwinOaks people, check your recipes! If it IS 2 whole cups, that is an enormous amount for only a pound of tofu. Plus, 2 cups of sesame oil is an entire bottle of average size, so that’s pretty expensive as well.
    I would suggest using 2 Tablespoons of the sesame at the very most, and maybe 1/2 cup of canola or maybe olive oil.

    I’ve done this recipe and the 2-4 cups of oil is accurate if you marinate it in a bowl. If you do it in a flat pan you can get away with less. Try it!
