Twin Oaks Tofu is sold without water, vacuum-packed in plastic. The process of pasteurizing and chilling our tofu gives the 1-lb blocks a 60-day shelf-life and our 12-lb bulk a 40-day shelf-life. When you bring our tofu home, make sure to refrigerate it. What you donŐt eat, place in a container and cover with cold water, cap tightly and refrigerate. Change the water daily and your tofu can be kept fresh for up to one week. You can freeze and then thaw our tofu to change it texture completely, making it similar to ground beef in chewiness. Place vacuum-packed tofu in the freezer for at least 24 hours before thawing. Note: the tofu will change its color to tan, and once thawed, will be spongy, rubbery and full of water. Simply squeeze the water out and crumple the tofu into your recipe.
Tempeh
Tempeh is a fermented food made from cooked soybeans bound together by a dense, white, cottony microorganism. It is a wonderful soyfood, rich in protein and B vitamins, low in calories and fat, and completely free of any cholesterol. Tempeh differs from tofu in that it has a firmer texture, has a greater density and higher in fiber because the whole bean is used. Tempeh can be sliced and baked, fried, or steamed. It adds a nutty flavor to pizza, casseroles, or stir-fired rice. It has a slight mushroom aroma and flavor. Well-seasoned and chopped, grated or crumbled, tempeh can even look and taste like red meat or poultry. Use it as a main course in place or meat, poultry, seafoods or cheese. Like tofu, tempeh takes on the flavor of the ingredients with which it is cooked. Fresh tempeh contains 19.5% protein or about as much as beef and chicken, and 50% more than ground beef. It has the highest quality protein found in any soyfood. It is a complete protein and a good source of vitamin B-12. We recommend that tempeh be kept frozen until ready to use. Allow it to thaw in the package for 45 minutes at room temperature. Some gray or black spots are normal sporulation and do not indicate spoilage.
