Tofu Spinach Pie

Looking for a warm, hearty dish for a cool fall dinner. Also a great way to sneak tofu into the kids diet.

makes one 9 inch pie

Sauté until onions are soft:

1 cup onions
¼ cup oil

Stir in and cook:

2 cups spinach, chopped

Remove from heat. Mix in:

1 pound Twin Oaks Fine Tofu
1tsp garlic powder
2 TBS nutritional yeast flakes
½ tsp. salt
1 TBS lemon juice

Place in a partially baked pie shell, cover top with an unbaked crust. Slash top crust in several places. Bake pie at 375 degrees for 25 to 30 minutes until golden brown.

Try adding carrots, zucchini, or butternut squash for some more tasty alternatives.
